Thanksgiving+Slideshow
You're probably thinking what I was thinking... eww! That could never taste like mashed potatoes! But I was pleasantly surprised. It was actually really, really delicious! I'm pretty sure I can trick Jude into eating vegetables with that... mwahahaha!
I also tried her cranberry apple stuffing recipe. I used Rudi's gluten free bread and it turned out great- for those of you who eat gluten, it tasted like "normal" food :-)
I took a few pictures of the occasion, of course...
It really is astounding how many things we all have to be thankful for. I am continually overwhelmed by how gracious God has been and continues to be to me. Look around~ and I think you'll also be amazed at what He has given you! :-)

Healthy, delicious apple crisp... yes, it exists! :-)
Gluten free apple crisp
Filling:
1/2 cup of apple juice
1 tablespoon freshly squeezed lemon juice (you only need a small lemon for this)
1 tablespoon arrowroot powder (Whole Foods def has this)
1 teaspoon ground nutmeg
5 medium apples, cored, peeled, sliced, and cut in half width wise
Topping:
2 cups blanched almond flour (I get mine here)
1/2 teaspoon sea salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 cup grapeseed oil (also got this at whole foods- this is used instead of butter. it's better.)
1/4 cup agave nectar
1 tablespoon vanilla extract
For the filling:
Preheat the oven to 350 degrees. Set aside an 8-inch square baking dish.
Whisk together the apple juice, lemon juice, arrowroot powder, and nutmeg in a small bowl. Place the apples in a bowl, toss with the apple juice mixture, then transfer to the baking dish.
For the topping:
Combine the almond flour, salt, cinnamon, and nutmeg in a large bowl. In a medium bowl, whisk together the grapeseed oil, agave nectar, and vanilla extract. Stir the wet ingredients into the almond flour mixture, until coarsely blended and crumbly.
Crumble the topping over the fruit and cover the dish with aluminum foil. You should taste a little bit of it. It's good.
Bake for 45 minutes in the oven. Remove the foil and bake for an additional 5 to 10 minutes, until the top of the crisp is golden brown and the juices are bubbling. Let the crisp cool for 30 minutes, then serve warm. (If you don't wait for 30 minutes, the topping will be mushy. So try to have some self control :-)

Someone has a case of the Mondays.
It's been an interesting morning. Aviyah slept through the night, which never happens, and Jude asked for something he never, ever, ever asks for.
He was crazy this morning. He freaked out because he had "snots on his face" about every 5 minutes. At about 10:30am, after wailing for a good 15 minutes about an undisclosed problem, I could finally make out "I want to brush my teeeeeeth!"
"Ok, ok... we'll brush your teeth! Why do you want to brush your teeth?"
"I want to brush my teeth so that I can read a book and take a nap!"
He was serious. We brushed his teeth and he settled happily into his bed as I read him a book. Then he went to SLEEP. Without me having to go in there numerous times to ask him to quiet down. He just... slept! He's been quiet in there for two hours now!
This is not my child. He would never, ever ask for that. Where's the real Jude?

Chocolate Peanut Butter Balls!

Chocolate Peanut Butter Balls
Here are the really super healthy... I mean, delicious... ingredients:
1 stick melted butter 1 pound powdered sugar 2 cups peanut butter
3 cups Rice Krispies
(You can also make it without the Rice Krispies, which I actually prefer, but it's good both ways.)
2 pkgs. of Chocolate or Vanilla flavored almond bark (You can get this almost anywhere- it looks like chocolate. It's in the baking aisle by the choc. chips.)
Thoroughly mix butter, sugar, and peanut butter together in a big bowl. Then add in the Rice Krispies.
Roll into small balls (about an inch and a half wide) and place on wax paper on top of a dish or pan that you can slide in your freezer. Stick a toothpick into the middle of each one~ it will help you dip them in the chocolate later. Put the balls in the freezer for twenty or thirty minutes (until firm).
Now, for the good part... the chocolate!!! :) You can melt it in a double broiler, but I found it much easier to melt small amounts of the almond bark in a mug in the microwave (follow package instructions for melting times). Then you can dip one ball at a time in there and not have to work to hard to cover the whole thing in chocolate :)
Dip the peanut butter balls into chocolate. Set on wax paper and let chocolate harden (don't put them into the fridge or freezer to speed this up, it makes them set weird). If you want to remove the toothpicks, do it right after you set them on the wax paper. But they make them look fancier if you're going to a party or something :)
Makes approximately 60 (if you make them with Rice Krispies~ it will be fewer if you omit them). These keep pretty well in the freezer and fridge (I think that they are extra delicious when chilled). I kept a good stock in the freezer for guests and special occasions (such as chocolate cravings, haha).
Oh, another thing you can do to make them prettier is drizzle chocolate over them~ this doesn't really work with the almond bark, it's too thick. Probably have to go with real chocolate on that part.
